Thermos lunch box C-3PO standee
Although Star Wars lunch boxes were a cafeteria standard in the late 70s and early 80s, very little store display material can be found. This may be because lunch boxes of many varieties were sold together without focusing on any specific movie or TV license. I seem to recall a cardboard school bus being used to shelve lunch boxes at one point.

Standee displays can get a bit stale, using the same photographic image over and over again for multiple promotions. This piece really stands out, though, with cartoon-like art of C-3PO that would have loomed over a 6-year-old. This six-foot display is unusually tall; many vintage standees tend to be slightly smaller than their film counterparts.

Other store displays for Star Wars lunch boxes can be seen here and here. I have only seen vintage Thermos display items for A New Hope, but not any ESB or ROTJ.
